CHW Kale Salad–to die for!!


  • 1 Bunch Green Kale
  • 1 Bunch Red Kale
  • 1 Can Cannelloni White Beans, drained
  • 2 Oranges, segmented and juice saved for dressing
  • 1 Pomegranate, seeded
  • 2-3 Ounces Pecorino, shaved
  • 1 Lemon, juiced
  • 1 Tbsp Chives, fine diced
  • 4 Tbsp Olive Oil
  • 1 Tbsp Red Wine Vinegar
  • 1 tsp Dijon Mustard



De-stem kales and lightly chop. Toss with lemon juice and set aside for 20 minutes before dressing and adding salad components.
For the dressing, combine the left over orange juice, chives, vinegar and Dijon. Mix well. Slowly add oil creating an emulsion.
Combine Kale, Pomegranate seeds, orange segments and white beans. Toss with dressing.
