All recipes that I post can be adapted for your particular diet.  I either cut out oil and dairy for me, or just use an oil spray.


1/3 pound thin spaghetti (I use gluten free by BioNaturae http://www.bionaturae.com/gluten-free-pasta.html)

3/4 pound broccoli rabe

2 Tablespoons olive oil

2 Tablespoons thinly sliced garlic

sprinkle of Parmesan to taste

Bring a large pot to boil.  Meanwhile rinse broccoli rabe and trim off stems.  Coarse chop.   Add oil into large skillet  to heat and add in garlic over medium heat.  Let garlic just get golden at edges–don’t brown or will become bitter.  Add broccoli rabe and stir until well wilted (2-3 minutes).

Add spaghetti into boiling water and follow directions.  Drain pasta, reserving 1/4 cup of pasta water.

Add pasta water and pasta to skillet with broccoli rabe and stir until ingredients are are combined.  Sprinkle the Parmesan on top.

Serve immediately.

Makes 2 servings
