I was kvetching to a friend that this new vegan lifestyle requires more work and kitchen equipment than I have.  I’ve not needed a food processor in years so I gave away my kitchen stuff 3 years ago.  It was actually a pleasure to minimize my ‘stuff’ that was gathering dust.

Now I need a few things back.  Or again.  My good and lovely friend Donna has sent me a mini food processor for a Christmas gift.  It’s great to be a Jew and get a present.  Only someone who is really aware of my life at present would understand what my needs are like.

Never has a gift meant more to me.  As soon as it gets here, I’m making these.

Chocolate Peppermint Truffles

1/2 cup pecan butter (almond butter may work well too)
1 dark chocolate bar (I used Endangered Species 3.5 oz)
medjool dates (pits removed)
1/2 tsp peppermint extract

In a food processor, combine all the ingredients and blend until a dough starts to form. Roll into balls and place on a lined baking sheet. Store in the fridge to firm them up. About 20 minutes. I got 10 truffles out of my batch. Enjoy!
